A/C Manifold Guages

Just got a new set of A/C manifold gauges but not sure how to read them correctly. I know there is a high and low pressure gauge I know how to hook them up and the precautions to take. I just don't know which scale on the dials to use. Mine read PSI on the very outer edge. Going inward toward the center of each gauge is BAR, R-404A, R-134A, R-22 and R-410A. It looks like ETCG reads the gauges on the PSI or outside scale. Am I understanding this correctly?

Another question about the gauges: When they are removed from the vehicle, pressure remains inside the manifold and shows on both gauges. When the pressures are released both sides , especially the high side have quite a bit of refrigerant to release. Is there a way to have that refrigerant from both the high and low sides go back into the car's system and avoid the release back into the atmosphere?
