Checking both the CTS and thermostat is trivial, but “a lot of work” in sense that I have to get brand new gaskets for the thermostat and doing either of these requires me to replace the coolant again (which again adds the risk of introducing air into the system).

Yes, but just as an engine running without oil will show lower temperature on the gauge, I am wondering if air in coolant can cause the same effect?

Exactly. it takes me an 20 mins to replace the brake fluid with new. So early morning weekend and $10 and I’m done.
What’s all this measuring and hygrsocipic and litmus test and electric tester?
Why bother?
Please look at your field service manual. It will specify both by age and mileage.
Most fluids loose their additive properties with time and need to be replaced by age or mileage.

Did you rotate the tires often?

Alternator might not be charging battery enough so it depleted slowly over time. There might also be phantom leakage.
Best is to get the CCA of the battery checked after full charge
