I have hired guys that were really good on the book side but couldn’t make it translate to the real shop world,I have hired guys that did really poorly on the book side but have tremendous mechanical ability.
If you dont have a natural ability for mechanics no amount of book time will help you.

First, find a trustworthy mechanic, someone who has been recommended by a friend. Best advice ever!!
You can chase codes till you go crazy,I hate it when a customer has the codes read from a place like autzoned and insist they know whats wrong and wont listen to our recommendations for the correct repair.
Autozoned does the customer a disservice by selling them what they dont need based on a usually uneducated salesperson reading the codes.
Wow sorry for the rant, sort of hits a hot button with me.

your heat/ac problem is a one way vac check valve is not working it should be located just before the a/c heat box,Lots of chrystler/jeep products have this problem.
On low vac when you give the engine throttle the blend doors move to the defrost side on higher vac they go to the setting on the dash.
            Hope this helps.

If it is overheating at idle it could be a worn fan clutch.
temp variations at speed could also be the fan clutch and air in the system.

I have had a few of these come through the shop with egr valves that were coked up/stuck open and caused the problem you have and they didnt throw any codes.
Cleaned the egr and on the bad ones we replaced and they ran fine.
                                good luck.
