      Hey guys, thanks for all the replies, sadly I have not been able to solve the issue still. Here’s the update:

      I had the water pump replaced, it was completely rusted over as you can see from the photo I attached.

      Today I took it for it’s first drive after the new water pump and the fluctuating idle looks to be gone. I was able to drive the 15 or so km’s to school keeping an eye on the gauge and for 99% of the journey temps were stable. As I got on the exit ramp the gauge started to rise once again very slowly about a sixteenth of an inch from the middle to about a quarter of an inch, but then I noticed something odd. If I turned the AC off, the temp gauge would drop immediately back down, close to the middle of the gauge again. As soon as I pushed the button to turn off the AC it would do this. I’ve also noticed the gauge twitching a little bit from time to time even before I replaced the water pump. Also if I turned the engine off and turned it right back on again, the gauge goes right back to reading a normal operating temperature and I’m able to idle with no problem.

      This has now made me think that I’m now not overheating at all and might just have a bad temperature sending unit.

        I’m pretty sure that the thermostat is in the right way. I looked it up on the service manual as well as on pictures on the internet.
        When I’m trying to bleed the system the temp gauge goes to the middle and stays there but by the time the fans kick on and I see the coolant drop from the thermostat opening up, the coolant gets very bubbly almost like froth.

        Not sure about a bypass hose to the heater core though, all I saw were the inlet and outlet hoses to the heater core. I’ve flushed the heater core and it was completly clogged up, I did manage to flush it out completely. I do get good heat coming out the vents now.

          It has about 115,000 km on it. I don’t seem to see any leaks and radiator cap is brand new and thermostat is rated at 78 degrees C.
          some additional info, while I’m bleeding the system, by the time the thermostat opens up and the fans kick on, the coolant seems to be simmering almost boiling I guess? Also steam. If it’s the water pump how could I be sure? once the thermostat opens up I definitely see flow in the radiator.
