Have you tried seeing what the PSi is from the fuel pressure port?
A possible cause might be the connector to the fans might be loose, giving it an intermittent connection. If the connection is solid, you can hook up a Power Probe and give it 12V and verify the operation. Just as a FYI, I would personally do all these tests myself unless you have full trust in the dealership
A simple way to test the functionality of the thermostat is to simply drop it in boiling water and to see if the thermostat opens up or stays close. If you’re going to do this, make sure you take note of the initial condition of the thermostat, however.
smells like rubber? pretty clear sign to check the drive belts. one of the pulleys could be seized up, causing friction upon the belts

This problem kind of reminds me of a faulty camshaft sensor. From my experience, a faulty camshaft senor will act up in the way that is described, and sometimes, it will throw a code or not. But if this same issue has been happening for over a year, and with no codes, then my suggestion is very unlikely. Have you tried resetting the ECU? Is there any subtle fuel-like smell around the vehicle?
