I would start with checking the crankshaft position sensor

First of all – What engine do you have in the VW ? Does the engine ‘sneezes’, looses power or runs weird before it finaly dies ?
Well, it’s not that difficult to pinpoint the problem. Just wait until the engine stops again and then check the fuel pressure and ignition.
In the past I had 2 familiar cases in my workshop. In 1 case it was the crankshaft position sensor, in the 2 it was the fuel pump.

Maybe the fuel filter or some sort of check valve/one way valve on the fuel line? That’s my first guess

When you’ll have the car in the air (for balancing) check the wheels for any play. Eric had a video on checking the wheels :
                    from 6:00

I would start with balancing the wheels, all of them.
Are there any disturbing noises coming from the suspension ?

I’m not a fan of this method, but sometimes there is no other way

If the paint repair was done the right way there is no need to worry about rust (or at least it shouldn’t rust more that usual).

You should consider a car that has a galvanized body. Some that I can think of at the moment : Audi, Volvo or SAAB. They just don’t rust that much (Volvos don’r rust at all)
