P0300 is the random misfire code, which means you could be having misfires in several cylinders. misfires could be due to loss of compression, ignition or fuel injectors..
for what you described the cause could be the first as you just changed the head gaskets which could mean something went wrong when you were bolting it..
but also, the no gas cap for three months could have got water in the tank.. so i would start by flushing the gas tank first then refilling it with new gas, then carry on with tests..

then the next step is to check ignition and fuel pressure

what is happening is the engine will be under high load but with not much airflow. i had a similar problem with my old 81 GMC Jimmy and the extra electric cooling in front of the radiator did cool things down..
the jeep isnt as open as the Jimmy (K5 Truck) under the hood, so you might need more vent to get the hot air out..
i do see lots of wheelers remove the hoods which could be a solution…

what i did was just took a log of live data while i was on my way work… i will be using another scanner to see the live misfire info…
i will be doing a vacume leak and compression test, Spark test on each coil and test the fuel Injectors as well.. i dont really 100% trust the PCM for giving the right info thats why i want to confirm all of this first..

from what you are saying it does seem that you have a problem with the exhaust.. it might be plugged somewhere..
just to make sure thats not the problem, can you install a pressure gauge in the place of the O2 sensor and see if there is any pressure.. it should be something as close as 0..for the O2 sensor, the car should be able to run without but you will have fuel efficiency problems and might be running rich as the engine will regulate it but you will still be able to achive high mph and high rpm.. just have the wires fixed and check if its working on or not with an obd2 scanner..
you can also check for fuel pressure to make sure you’re getting enough fuel to the engine..
