I have seen silicone paste used in the brake videos. I didn’t know about this product and have been using silicone dielectric grease in this application. Would that be an acceptable substitute, or have I been screwing things up all these years?

The main thing that differentiates “paste” from “grease” is:
        1) the percentage of polydimethylsiloxane (silicone) and
        2) the material that the silicone is suspended in.
Pastes generally contain about 50-80% silicone with some typically non-petroleum based substance acting as a suspension agent and filler. Grease on the other hand is around 5-25% silicone with the rest being a petroleum based grease.

You want to avoid petroleum products on brake components as it will degrade the rubber parts of the system such as the dust boots. I recommend this.
