Other night my light came on for low engine fluid just shut the car off and turned it back on went away . At the moment though the sensor had a malfunction. Today I decided to check my oil and barely had a any on the dip stick . Now I’m not leaking oil from the valve cover because I changed the gasket. My cam and crank seals are brand new my oil pan doesn’t have no cracks or leaks on it . Where did my oil go? I have a 01 Lexus engine 2jz

How many miles are on the engine?
How long ago was your last oil change?
The dipstick only measures the top quart and a half (or so).
So if there was oil on the stick, you are probably only a quart low.
It’s normal for engines to burn off a bit of oil and, the older the engine is, the more oil it will burn off. If it’s been a while since your last oil change, I wouldn’t worry about it.
