I am trying to do the timing belt change on my 1993 Honda accord wagon. That being said I dont have a nice jack like they use on the video. Is the jack that came with the car good enough for the slight lifting of the engine, to get that bolt to loosen on the engine mount???

If it goes high enough and you use a 2×4 between you will be fine.

Yes – you can get a 2×12 and cut it down short enough to cover the oil pan and put the jack under the board. The will aid in dispersing the weight so you are not going to poke a hole in your oil pan.
