If all you are doing is replacing the rotors and pads and have no need to open or drain the hydraulic system.
I see no need to worry about the ABS system.

Does your Jetta have the manual parking brake or the electronic brake? On the electronic brake you need a VAGCOM system to electronically retract the rear calipers, which makes this a pain to diy. If you have the manual brake then it’s like any other vehicle. Front brakes don’t require any special tools or electronic gadgets though.

Manual just lift up on it so I’m good just c clamp for front calipers and rent the tool for the back calipers

Here is a good video to watch for the rears:

Your big issue on the rears is to be is removing the caliper frame bolts. I believe they are a M14 and they are really tight, could be rusty and in a confined space.
I’ve done my 2009 Jetta once and thankfully I have a friend with a lift, otherwise removing these bolts would have been really difficult. Hit them with PB blaster or something else and let is soak for a few days.

Once you are past the bolts, it’s a straightforward job.

OMG… Is there a thing “electronic parking brake’s” like WTF if your battery dies your parking brake will be locked on… so you cant push your car when it dies… so if your car is pushed in to a parking spot so you cant jump it by moving your car out so you can get a jump start??

Yeah they’re a pain in the butt. My dads 07 Passat has them and they had a malfunction because the plastic motor housing cracked and got some dirt in them, so you couldn’t use the parking brake anymore, and the damn thing would beep every 3 seconds to let you know it wasn’t working. And because you need the computer to retract the piston, you can’t diy it!
