I have seen Eric’s brake fluid change video and it was great, but I was wondering… would it work if you were to change the fluid in the reservoir after each time you drove it to get the old stuff that goes in it out? Would it eventually get cleaned that way? What are your thoughts.

      Thanks.

No, because fluid isn’t exchanged inside the reservoir, only pushed out through the lines to the piston.

Agreed. You won’t get it all out that way because the fluid will settle in the calipers. If however you crack the bleeder valve open when you change out the brake pads you will in effect replace the fluid in the caliper. So yes, you can do what you propose as long as you crack the bleeder open when you replace brake pads in the future. In fact this is what I often do with my own vehicles.
