One of the wires to the VIC is for the dimming circuit. If you locate and cut this wire, the VIC should remain at full brightness all the time. This may create an undesirable effect at night by being too bright, though, causing eye strain or reducing night driving visibility (vision wash-out). See diagram below, pin 27 on the VIC.

But can I do it in the headlight switch to get it all “fixed” at one move – I mean the VIC, overhead screen, cluster dash etc.?
To fool the system, that the headlights are still off or smth.
No, can’t be done at the headlight switch. But, there is the dimmer module under the dash. This module is responsible for dimming all of the lights. You might try unplugging it and jumper the socket pins 1 and 4. Never tried it myself, so I don’t know if that would do it or not, but it’s worth a shot. Below is the wiring diagram. I circled the module in red.
